Canning, Canning, and More Canning

Today I feel like I'm drowning in many areas of life. One of them is canning. We've done a ton of it. And I just came in from picking more beans and tomatoes. Canning is HARD with a nursing baby around, I tell you. And then you finish the actual canning that took all day, and find that it is time to cook dinner and clean every dish and surface of the kitchen. I am grateful for the bountiful harvest we've somehow gotten despite our neglect and the waist-high weeds, but I am also grateful that the air is getting a little nippier and every day is taking us closer to the first frost when I don't have to can anything until next year!

Addison and Bryn are getting to be pretty big helpers. This is them making tomato sauce all by themselves! I was in the other room cleaning and realized how incredible it was, so I had to snap a picture.

Two bushels of peaches. For future reference, that is a ridiculous amount.  We went up to Brigham and picked them with my Uncle LaMar. We canned 30 quarts, 32 pints (when we ran out of quart jars), 3.5 full pints of peach jam, and 24 quarter pints of peach jam (for Christmas gifts), and finally decided to just freeze the rest, which was two cookie sheets full.

Our peach trees rocked this year! We got 40+ peaches and they were the sweetest, juiciest, yummiest, most beautiful ones I ever remember having. And I'm from the peach state. We didn't can these, just ate like 3 a day each and had peach milkshakes every night for a while.

Lots of tomato sauce, green bean-age, frozen zucchini, and frozen peppers going on too. I'll post numbers if we ever finish.

  1. Good grief! That is amazing! I can't wait to be able to do that some day. And I can't believe you had such good peaches! I'm super jealous. And Addison and Bryn are so cute. I loved this post.
